Acid

Are there different kinds of acid/poison in this game? What do you use to figure out your resistance to it? I mean obviously yeah, a higher-tier foe will spit more potent acid, but it seems to be quite random how it's affecting my characters: I ran my 25+ lvl barbarian into the Worms quest for testing and he takes ~some~ damage, and my 20+ lvl sorcerer takes enough that I can see it on his blood ball, but my 11th lvl assassin who's doing the quest for the first time seems immune, she can take a bath in the acid pools and it doesn't do a single point of damage. Is there some RNG here how potent the acid is or what type of resistance it needs?

AFAIK its magic dmg so magic resistance is required. Also those acid blobs stuck one on another so it may look like one but can kill you as fast at twenty of them.

Acid pools are fucked up. They do shitloads of damage, spawn at random places when projectile from spitting beasts reaches full length, and sometimes pools go completely invisible lol. I'd recommend avoiding them [poisonous monsters] by rerolling instance.

Oh yeah, I hadn't thought about them stacking. I remember distinctly that they didn't do that in the original Diablo, a new pool would only extend the duration, not the damage, essentially replacing the "old pool" with a new one. The only time they ever annoyed me is when they damaged my armor, lol.
But yeah in this one. Whenever I come across one of the dog-lords I always call him Mr. Creosote (from Monty Python) because it's just a constant hose of vomit coming at you and covering everything. I don't know if they're my least favorite enemies, right now I seem to have a personal grudge against those danged shooting sheep guys who run away when you come near so it's a Benny Hill chase every time you want to kill one, but yeah they're definitely up there.
