Game is very playable and stable despite having few known bugs, I'd recommend to play Belzebub for one difficulty to check out quests and then switch to Tchernobog if you ever plan to interact with people.

Just whatever you're comfortable with. Only in Tchernobog there is a minimum level required for entering any dungeons within any difficulty.

On a personal note, I was 30-ish when I successfully completed Normal on my first character in Belzebub

I tried as Rogue but it didn't go very well. Remember that Ironman is possible and playable in original Diablo not because game was purposely made for that.

you can make as much servers as you want; but Hamachi servers have limited capacity unless you pay and I don't think someone would do such a thing
just make multiplayer thread or create server in ZeroTier, it's free and don't have server capacity limitations
