Level 26 without good gear is too low for rogue to take out Diablo in normal, use the $player command and grind up to low-mid 30's and you'll see Diablo eventually barely hits you even with mediocre gear.

I just did this again to check and to my (nice) surprise it was Golem.

Pretty handy to save this book for later down the track and boost Golem when the magic required amount gets ridiculous.

So how exactly do I fix my character?

All the stats are reset, do I level up once and it will trigger all the points back or will this be fixed?

(I have a backup, so can just rollback if I must)

Just keep levelling, you should be able to do level 16 and Lazarus clears at $player 5+ easily and you'll be able to grind up to 33-34. It's been mentioned before but I'll mention it again, the full Arctic set bonuses do not apply - the strength, HP, extra cold damage etc - zero of them apply when wearing full gear. (it makes a pretty cool sound to acknowledge the full set when worn though) The individual bonuses do apply.
